Lemon Poke Cake w/ Strawberry Cream Cheese Frosting

I try to find a new dessert recipe or flavor combinations to experiment with on a Tuesday or Thursday while Jackson is at preschool and the babies are napping.  This week I had my heart set on something lemon, but wanted to find something besides lemon buttercream.  The end result was a lemon poke cake with strawberry cream cheese frosting.


To Make Lemon Cake
Bake lemon cake mix according to directions.
Mix together the juice of 1 lemon and a cup of powdered sugar.


After the cake is baked, use a fork to poke holes throughout the cake.
Pour the lemon glaze over the cake. 

 Refrigerate for an hour.



To Make Strawberry Cream Cheese Frosting
Clean and hull 4-5 strawberries.
Put them in the food processor or mince and mash them with a large knife.


Whisk together 8oz cream cheese and 1/2 stick a butter.
Add 4 cups of powdered sugar, 1 tsp vanilla extract, and the strawberry puree.
The icing will be thin, but you can add corn starch to thicken it if it's too runny.  (Corn starch doesn't alter taste and is actually one of the ingredients in powdered sugar.)
Pour frosting over cake and refrigerate.

  1. I wasn't sure about the strawberry/cream cheese icing with the lemon cake but, it was delicious!
